Jean Montagard has given much of his time in organizing and conducting the cooking classes required as electives by Academic Study Associates (based in New York)  for their Summer French Immersion Programs in Nice.
These sessions have taken place every Summer from 2001 on. Jean Montagard regularly devoted 10 to 12 whole afternoons to groups of 12 students each, working and making them work on full menus (entrée, main dish, dessert), during 4 to 5 hours each time, insisting on all aspects of the preparation of a proper meal - cutting, carving, cooking or baking, preparing gravy and sauce, but also
learning how to dish out and arrange plates and dishes.
Jean Montagard's courses were extremely popular and year after year, the number of applications have grown so much that it became impossible to comply with all the demands.

Jean Montagard's courses have been most instrumental in the success of the ASA program in Nice.
